Vietnamese Spring Rolls

2 oz rice vermicelli
8 rice wrappers (8.5" diameter)
8 large cooked shrimp - peeled, deveined and cut in half
1 1/3 T chopped fresh Thai Basil
3 T chopped fresh mint leaves
3 T chopped fresh cilantro
2 Lettuce leaves chopped
4 tsp fish sauce

1/4 C

water
2 T fresh lime juice
1 clove garlic, minced
2 T white sugar
1/2 tsp garlic chili sauce
3 T hoisin sauce
1 tsp finely chopped peanuts

 

Preparation

  1. Prepare (cook) rice vermicelli
  2. Mix fish sauce, lime juice, garlic, sugar into a bowl
  3. dip rice wrapper in water to soften to perpare for making a burrito
  4. Add vermicelli, shrimp, basil, mint, cilantro, lettuce to rice wrapper as it lays flat on a plate.
  5. drizzle fish sauce (mixed above) over wrapper
  6. drizzle garlic chili sauce or hoisin sauce over wrapper
  7. sprinkly peanuts
  8. Then roll up ingredients and eat.
